This preserve has a great history and an even bigger flavour.

A traditional preserve of Greece with a charming history of different specialities from the Mainland through to each of the Islands. The traditions are longstanding and very precisely handed down through the generations

I wish that we had a rich preserving history in the UK but to an extent I think this is a product of geography. Warm and sunny Greece is perfect for a slower life when the weather is too hot to work outside. Some quiet, simple refreshments taken in the shade with an old friend or neighbour suits the mood. An abundance of suitable fruits also helps, ripe for preservation

The cold and windy British Isles are not so condusive to sitting in the shade sipping iced water and tasting the deliciously preserved fruits that your friend is offering. Its more about a hot brew and a biscuit huddled by the fire!

Try them anyway - you never know there could be a tropical heatwave and this traditional hospitality means so much more than the spoon fruits

Our Workshops are friendly, no experience of cooking or preserving is necessary and we try to use everyday, familiar equipment. You can cook along with the Live Workshop or use the recording which will be place in The Library of the School soon after the Workshop finishes
